 Braised Mutton with Radish

Serves 1 to 2 and ready in 45-55 min

Ingredients
- 500g mutton
- 50g radish
- 1 stalk spring onion
- 5 slices ginger
- 2 teaspoons Szechuan pepper
- 2 pieces star anise
- 2 stalks cinnamon bark
- 1 tablespoon soy sauce
- 4 teaspoons rice wine
- 1 teaspoon salt
Preparation (5 min)
- Cube mutton and put in boiling water to cook for 1 min
- Remove mutton and wash clean
- Skim off foam from the water and keep for use later
- Cut radish into big chunks
- Cut spring onion into sections
Instruction (40-50 min)
- Fill wok with 2.5kg water left from cooking cubed mutton
- Bring to a boil with high heat
- Add mutton, radish, soy sauce, salt, rice wine, star anise, cinnamon bark,
ginger, spring onion, and Szechuan pepper
- Cover tightly and reduce heat to simmer until mutton is tender
- Place in a bowl and serve
