 Poached Sliced Pork in Hot Chili Oil

Serves 1 to 2 and ready in 15-20 min

Ingredients:
- 200g pork
- 1 egg
- 1 lettuce
- 3 stalks spring onion
- 5 slices of ginger
- 5 cloves of garlic
- 1 tablespoon Szechuan pepper
- 1 teaspoon cornstarch
- 15 dried red chili peppers
- 3 tablespoons vegetable oil
- 1 teaspoon Szechuan hot bean sauce
- 1 teaspoon salt
Preparation: (5 min)
- Cut pork into thin slices
- Slice garlic, mince dried red chili peppers and spring onion
- Marinate pork in egg white and 1/2 teaspoon cornstarch
Instruction: (10-15 min)
- Heat 3 tablespoons vegetable oil until hot
- Add dried red chili peppers, Szechuan pepper, Szechuan hot bean sauce,
garlic, ginger and stir-fry until aromatic
- Fill wok with 3-4 tablespoons water and add 1/2 teaspoon cornstarch
- Cook wok content until boiling
- Slide in pork and cook through
- Add lettuce and stir
- Sprinkle salt, spring onion and serve
