 Spare Ribs and Lotus Root Soup

Ingredients
- 300g spare ribs
- 300g lotus root
- 2 stalks spring onion
- 5 slices ginger
- 1 tablespoon rice wine
- 1/2 teaspoon pepper powder
- 2 teaspoons salt
Preparation (10 min)
- Cut spare ribs into chunks about 3 cm long
- Wash lotus root, remove skin and slice into discs about 1 cm thick
- Cut spring onion into sections
Instruction (55-60 min)
- Put spare ribs in boiling water
- Add 2 slices ginger, rice wine and cook for 1 min
- Remove spare ribs and set aside
- Place spare ribs a pot and add ginger
- Bring to boil with high heat and remove foam
- Cover tightly and reduce heat to simmer for 20 min
- Add lotus root, spring onion and cook for another 30 min
- Sprinkle in salt, pepper power and serve
