Spare Ribs and Lotus Root Soup

Ingredients

  • 300g spare ribs
  • 300g lotus root
  • 2 stalks spring onion
  • 5 slices ginger
  • 1 tablespoon rice wine
  • 1/2 teaspoon pepper powder
  • 2 teaspoons salt

Preparation (10 min)

  • Cut spare ribs into chunks about 3 cm long
  • Wash lotus root, remove skin and slice into discs about 1 cm thick
  • Cut spring onion into sections

 

Instruction (55-60 min)

  • Put spare ribs in boiling water
  • Add 2 slices ginger, rice wine and cook for 1 min
  • Remove spare ribs and set aside
  • Place spare ribs a pot and add ginger
  • Bring to boil with high heat and remove foam
  • Cover tightly and reduce heat to simmer for 20 min
  • Add lotus root, spring onion and cook for another 30 min
  • Sprinkle in salt, pepper power and serve
