This dish is one of the well-known Szechuan cuisine. It is made of vermicelli and spicy minced meat. Its name is from the representation of the dish. Ground pork looks like ants, while vermicelli noodles resemble the branches of a tree.
 Ants Creeping up a Tree

Ingredients
- 100g ground pork
- 350g vermicelli noodles
- 1 stalk spring onion
- 2 tablespoons vegetable oil
- 1 tablespoon soy sauce
- 1 tablespoon rice wine
- 2/3 tablespoons Szechuan hot bean sauce
- 1/2 teaspoon sugar (optional)
- 1 teaspoon salt
Preparation (10 min)
- Soak vermicelli noodles in warm water until they are pliable
- Mince spring onion
- Drain vermicelli noodles well and cut them into shorter length
Instruction (5-10 min)
- Heat 2 tablespoons vegetable oil until hot
- Add Szechuan hot bean sauce and stir-fry until aromatic
- Slide in ground pork and stir-fry until cooked through
- Stir in vermicelli noodles and cook briefly
- Pour in rice wine, soy sauce and stir in sugar, salt
- Stir-fry for a few seconds and serve
