Stewed Pork Leg with Peanuts

Ingredients:

  • 150g pork leg
  • 50g peanuts
  • 2 stalks spring onion
  • 7 slices of ginger
  • 1 tablespoon rice wine
  • 1/2 teaspoon pepper powder (optional)
  • 2 teaspoons salt

Preparation: (5 min)

  • Chop pork leg into chunks
  • Cut spring onion into 4-5 sections
  • Wash peanuts, discarding impurities

Instruction: (60 min)

  • Put pork leg in boiling water and add 3 slices of ginger, rice wine
  • Cook for 10 min to get rid of smell and blood
  • Remove pork leg and drain
  • Put pork leg, peanuts, ginger, and spring onion in empty wok
  • Add water to wok and make sure water level is above pork leg
  • Cover and heat wok with high heat until boiling
  • Lower heat to simmer for 1 hour or until meat is tender
  • Sprinkle salt, pepper powder and serve
