 Twice Cooked Pork
Twice Cooked Pork is one of best-known Szchuan style Chinese dishes.

Ingredients:
- 200g pork belly
- 2 green bell peppers
- 50g leek
- 5 slices of ginger
- 3 tablespoon vegetable oil
- 1/2 tablespoon rice wine
- 1 tablespoon sweet flour sauce
- 1 tablespoon Szechuan hot bean sauce
- 1/2 teaspoon sugar
Preparation: (25 min)
- Boil pork belly in hot water for about 20 min
- Cube green bell peppers
- Cut leek into 4-5 sections
- Chop pork belly into thin slices
Instruction: (10-15 min)
- Heat vegetable oil until hot
- Slide in sliced pork belly and stir-fly until curving
- Stir in green bell peppers
- Stir-fry for a few seconds and remove
- Leave the oil in wok and reheat
- Pour in sweet flour sauce, Szechuan hot bean sauce, rice wine and stir in sugar,
ginger
- Return pork belly and green bell peppers in the wok
- Stir in leek and stir-fly until aromatic
- Put wok content in a plate and serve
