Twice Cooked Pork

Twice Cooked Pork is one of best-known Szchuan style Chinese dishes.

Ingredients:

  • 200g pork belly
  • 2 green bell peppers
  • 50g leek
  • 5 slices of ginger
  • 3 tablespoon vegetable oil
  • 1/2 tablespoon rice wine
  • 1 tablespoon sweet flour sauce
  • 1 tablespoon Szechuan hot bean sauce
  • 1/2 teaspoon sugar

Preparation: (25 min)

  • Boil pork belly in hot water for about 20 min
  • Cube green bell peppers
  • Cut leek into 4-5 sections
  • Chop pork belly into thin slices

Instruction: (10-15 min)

  • Heat vegetable oil until hot
  • Slide in sliced pork belly and stir-fly until curving
  • Stir in green bell peppers
  • Stir-fry for a few seconds and remove
  • Leave the oil in wok and reheat
  • Pour in sweet flour sauce, Szechuan hot bean sauce, rice wine and stir in sugar, ginger
  • Return pork belly and green bell peppers in the wok
  • Stir in leek and stir-fly until aromatic
  • Put wok content in a plate and serve
