 Sweetened Vinegar Spare Ribs

Serves 1 to 2 and ready in 40-45 min

Ingredients:
- 500g spare ribs
- 1 stalk spring onion
- 10 slices of ginger
- 1 cloves of garlic
- 2 teaspoons cornstarch
- 500g vegetable oil (actually consume 3 tablespoon oil only)
- 1/2 tablespoon soy sauce
- 1 tablespoon vinegar
- 1/2 teaspoon salt
- 1 tablespoon sugar
Preparation: (5 min)
- Chop spare ribs into small chunks
- Slice garlic and mince spring onion
- Mix cornstarch with some water
Instruction: (35-40 min)
- Heat 500g vegetable oil until hot
- Carefully slide spare ribs into oil and fry until golden brown
- Remove spare ribs and drain
- Leave 3 tablespoons oil in wok
- Add salt, soy sauce, ginger, garlic and stir in spare ribs
- Fill wok with water and make sure water level is just above the spare ribs
- Heat wok over high heat until boiling
- Lower heat to simmer for 30 min
- Add sugar, vinegar and minced spring onion
- Pour in prepared cornstarch sauce
- Heat wok over high heat for 10 seconds and serve
