 Fish Head with Chopped Chili Peppers

Serves 1 to 2 and ready in 25-30 min

Ingredients:
- 1 fish head (about 500g)
- 2 red chili peppers
- 1 stalk spring onion
- 5 slices of ginger
- 4 cloves of garlic
- 2 teaspoon vegetable oil
- 1/2 tablespoon rice wine
- 1 teaspoon pepper powder
- 1 teaspoon salt
- 1 tablespoon Szechuan chili sauce (optional)
- 1 tablespoon black bean sauce (optional)
Preparation: (10 min)
- Cut spring onion into 2-3 sections and then slice them lengthways into
thin strips
- Mince red chili peppers, ginger, and garlic
- Cut fish head into halves
Instruction: (15-20 min)
- Apply 1 teaspoon vegetable oil to the fish head and put it in a plate
- Sprinkle minced red chili peppers, ginger, salt and pepper powder on the
fish head
- Pour rice wine, Szechuan chili sauce (optional) and black bean sauce (optinal)
on the fish head
- Steam the fish head in a steamer for 7-9 min
- Sprinkle minced garlic on the fish head
- Heat 1 teaspoon vegetable oil until hot
- Pour the hot oil on the fish head
- Garnish with spring onion strips and serve
