Scrambled Eggs with Tomatos

Serves 1 to 2 and ready in 9-10 min

Ingredients:

  • 2 eggs
  • 3 tomatoes
  • 4 teaspoons vegetable oil
  • 3/4 teaspoons salt
  • 1/4 teaspoon sugar (optional)
  • 3 slices of ginger (optional)
  • 2 cloves of garlic (optional)

Preparation: (5 min)

  • Beat the eggs with 1/4 teaspoon salt
  • Slice tomatoes to 8 pieces each

Instruction: (4-5 min)

  • Heat 2 teaspoons oil in a wok till hot
  • Pour in the eggs and cook
  • Stir constantly till thickened
  • Place the scrambled eggs into a dish
  • Reheat 2 teaspoons oil in the wok till hot
  • Add ginger and garlic (optional)
  • Stir-fry for a few seconds
  • Add tomatoes, remaining salt, and sugar (optional)
  • Stir-fry about 30 seconds
  • Add scrambled eggs to the wok
  • Stir about another 30 to 60 seconds
  • Remove and serve
