 Scrambled Eggs with Tomatos

Serves 1 to 2 and ready in 9-10 min

Ingredients:
- 2 eggs
- 3 tomatoes
- 4 teaspoons vegetable oil
- 3/4 teaspoons salt
- 1/4 teaspoon sugar (optional)
- 3 slices of ginger (optional)
- 2 cloves of garlic (optional)
Preparation: (5 min)
- Beat the eggs with 1/4 teaspoon salt
- Slice tomatoes to 8 pieces each
Instruction: (4-5 min)
- Heat 2 teaspoons oil in a wok till hot
- Pour in the eggs and cook
- Stir constantly till thickened
- Place the scrambled eggs into a dish
- Reheat 2 teaspoons oil in the wok till hot
- Add ginger and garlic (optional)
- Stir-fry for a few seconds
- Add tomatoes, remaining salt, and sugar (optional)
- Stir-fry about 30 seconds
- Add scrambled eggs to the wok
- Stir about another 30 to 60 seconds
- Remove and serve
